I recently learned how to make Caesar dressing from scratch and I can’t tell you enough how easy it is! I personally don’t like heavy mayo infused dressings so I like to make a vinaigrette. This vinaigrette goes well on any salad greens and you can even add an avocado to make it a bit creamier if you like. Add it to chopped cabbage and carrots and you have the easiest, most refreshing, different and light slaw mix for any weeknight!
- Juice of half a lemon
- Extra virgin olive oil
- 2 garlic cloves, minced (optional)
- 1 tablespoon anchovy paste
- 2 teaspoons Dijon mustard
- Salt and pepper to taste
- Grated parmesan cheese (optional)
Whisk all the ingredients to together using as much oil as you may need depending on the amount of greens you are serving it with, add your favorite greens or cabbage and mix to coat. Enjoy!
